Chicken and Sweet Potato Meatballs – Toddler Friendly Recipes

This chicken meatball with a sweet potato recipe is perfect for both children and adults alike! As per usual, it is really simple to make and follow. I couldn’t resist having a nibble myself!

Chicken and Sweet Potato Meatballs

Ingredients

  • 1 cooked chicken breast (approximately 120g)
  • 1 sweet potato (medium)
  • 1 slice of bread
  • 1 egg (medium) or 1 tbs of apple sauce (egg-free alternative)

Instructions

  1. First, preheat the oven to 200 degrees Celcius.
  2. Next, prick your sweet potato several times and put it in the microwave on high heat. Bake the potato for 8 minutes, turning it over half way through.
  3. After that, take your chicken and ground it down (A blender works really well).
  4. Repeat with the slice of bread until you are left with crumbs, and combine it with your ground chicken in a bowl.
  5. Once cooked, scrape the inside of your sweet potato into the bowl and mix.
  6. Add an egg to the mixture and stir. This should bind the ingredients together (alternatively, you can use apple sauce for an egg-free alternative).
  7. When the ingredients have been sufficiently mixed, take a small handful of the mixture and roll it into a ball. The size of each ball is down to personal preference.
  8. Place each meatball onto a baking tray and put into the oven for 20 minutes (or until golden brown), turning the meatballs occasionally.
  9. Finally, remove the meatballs and allow to cool down before serving your little one.

Just made these and excited to see what baby H thinks of them ๐Ÿ™‚ I take it they’re ok to freeze? How long would you leave in the fridge? 2/3 days?

Sorry, this ended up in Spam for some reason! I hope Baby H enjoyed them.

This might be a bit late now but…I’ve never frozen them so I wouldn’t like to say for certain but egg and chicken guidelines say it’s okay. And I wouldn’t refrigerate longer than 48 hours, if uncooked, and 3 days, if cooked (although they taste better freshly cooked) ๐Ÿ™‚

I always have a hard time finding grams to volume measurements (I’m in Canada and use cups and tablespoons) and when I do find online equivalents they always seem way off (1 cup of grated carrots for half pound of chicken seems like waaay too much carrot!). Do you have volume measurements for this recipe? Thanks!

A quick Google search tells me 120g is just under 2/3 cups but the rest should be quite easy to follow as I havenโ€™t given actual measurements :). However, Iโ€™m wondering if you have the right recipe as youโ€™ve said carrots. Did you mean sweet potato?
