Banana and Peanut Butter Oat Pancakes
As a busy mum, I’m a huge fan of anything I can throw together with minimal fuss. That’s why many of my recipes skip over the culinary mumbo jumbo and offer straight forward, easy to follow steps. My banana and peanut butter oat pancakes are no different!
I love how versatile banana and peanut butter oat pancakes are. They’re perfect for a healthy breakfast and can be enjoyed by all the family. This includes toddlers and baby led weaning!

The recipe makes 4-8 pancakes, depending on size you prefer.

Banana and Peanut Butter Oat PancakesPrint This
- 60g oats (blended)
- 2 medium bananas
- 2 medium eggs
- 1/2 tsp baking powder
- 1 tbsp peanut butter
- 1 tbsp milk
- First, blend the oats so that they have a smoother consistency.
- Then, take the bananas and slice them. Add the sliced banana to the blended oats.
- Crack your eggs directly into the blender and follow with baking powder, peanut butter and milk.
- Blend the mixture until it had a smooth consistency.
- Heat the pan on a medium heat. Non-stick is best so you do not have to add oil or butter to the pan.
- Spoon the mixture onto the heated pan and leave for around 2 minutes (or until golden).
- Flip your pancake over and cook the other side until golden. Do not cook on a high heat otherwise the outside will cook too fast and leave your pancake uncooked in the middle.
- Serve and add our healthy blueberry compote!
If you don’t have a blender, try this: 1. First, take a fork and mash the bananas until smooth. Then, mix in the peanut butter and milk. 2. Add the eggs and baking powder to the mixture and whisk with your fork. 3. Slowly, add the oats ensuring that you stir it well. 4. To cook your pancake, follow steps 5-8 above.
